This is the most practical long-term method for most people. Shelf life is typically 1–2 years (sometimes longer if very dry and well sealed). Flavor is good but a bit milder and “cooked” compared with freeze-dried.

  • Peel, then slice thin or mince/chop. Whole cloves take far longer and often dry unevenly. Thin slices or small pieces dry faster and more uniformly.

  • Dehydrator at ~105–130°F (or oven on lowest setting with the door cracked) until the pieces snap instead of bend. Time is usually 6–12+ hours.

  • Cool completely, then “condition” a few days in jars (shake daily, watch for moisture) before long storage.

  • Grind into powder with a spice grinder or blender if you want powder. You can also keep some as flakes or granules.

  • Store airtight, dark, and dry. A little uncooked rice in the jar can help with leftover humidity.


This is the method most homesteads use for everyday cooking garlic.


3. Freeze

Easiest and cheapest. Flavor stays strong for 6–12 months. Texture becomes soft, so it is for cooking, not raw use.

Good options:
